Kamikoto | The Difference Between the Kanpeki Knife Set & Black Kuro Set

Founded with the desire to develop a single bevel Japanese steel knife that would reflect the craft and heritage of Japanese knifemaking, Kamikoto has done just that.

In the beginning, Kamikoto sought to make a superior handcrafted steel knife that users would be proud to use in their kitchens. Keeping this idea in mind, we created the Kanpeki Knife Set.

Consisting of a 7-inch Nakiri vegetable knife, 8.5-inch Slicing Knife and 5-inch Utility knife, the Kanpeki Knife Set is complemented by its single bevel 片刃 Kata-ha blades which are crafted meticulously. These knives come razor sharp and ready to use and can come accompanied in a bundle with our 1000/3000 Toishi Whetstone that can be seen here.

The Kamikoto Kanpeki Knife Set is presented in a natural-colored ash wood box for safe storage and both handle and blade are satin finished.

Unlike the Kanpeki Set, our new black Kuro Series feature the hardest blades we have ever crafted which are made of zirconium dioxide, granting them superior edge retention.

Consisting of a 7-inch Kuro Series Santoku Knife, 6.5-inch Kuro Series Nakiri Knife and 5-inch Kuro Series Utility Knife, this knife set has a tool for every job in the kitchen.

All three of these knives are complemented by double bevel 両刃 Ryo-ba blades, differing from the Kanpeki Knife Set’s single bevel 片刃 Kata-ha blades.

Like the Kanpeki Knife Set, the Kuro Series is also beautifully packaged in a natural-colored ash wood box.
